Broccoli, Egg and Cheese Souffle

A puffy and light souffle that works perfect as a main course or a side dish.


  • 24 oz cottage cheese
  • 6 beaten eggs
  • 1/2 lb sharp cheddar cheese
  • 10 frozen cooked and drained broccoli


  1. Preheat oven to 350 degrees F.
  2. Mix all ingredients in casserole dish.
  3. Bake, uncovered, for 45 minutes to 1 hour. (Or until knife inserted near the center comes out clean.)
